How an order
is ticketed.
Five courses from order to settle — the same method whether the ticket is a sandwich or a steak.
The rail
run.
Each course produces a record — that's how orders stay ticketed, not just open.
Order filed
The client states the venue and the counter; the house answers with a written check — counter, course and timeline named before service.
Counter stocked
The counter is stocked before service — ingredients checked, prep marked, the rail updated before the order runs.
Courses served
The work runs under the order — courses timed, service delivered, status updated, everything ticketed to the same rail.
Client checked
The client receives the check — courses and service reported on a set cadence, not on request.
Order settled
The order closes with the rail reconciled — check, service and sign-off handed over and kept for reference.
Rules the house
tickets by.
Ordered first
No service before the order — a written check in place of a handshake.
Rail over memory
Courses and service live on the rail — the record, not recall, is the truth.
Stocked counter
Ingredients and prep checked before service — the counter stays open only if it's stocked.
Course-safe
Food and service handled under the house's safety terms — segregated, disclosed only as required.
Check handed over
Ticket, service and sign-off go to the client at close — the record is theirs.
Scope is plain
What's served and what's not is stated on the order — exclusions named, not assumed.
Asked at
the counter.
Describe the venue and the counter — the house answers with a written check including counter, course and timeline. Nothing runs without the order on file.
Full service is seated with table service; limited service is counter or carryout. Both ticket on the same rail — the order names which counter.
Nonalcoholic beverage bars only — bars, lounges and taverns are excluded, stated plainly on the order.
Frequently — an event that needs both a seated dinner and a snack bar touches two counters. The order names the counters and the service runs as one check.
